You cannot change the app permissions. Your only option is to uninstall.
For background data consumption of third-party apps, you can try Greenify app to force the background apps to close when not in use (https://play.google.com/store/apps/details?id=com.oasisfeng.greenify&hl=en)
Of course, you can also disable background data. But it will affect system features.
You can also disable mobile data when you are not going to use it for next a few hours.

simonKeymaster1. probably it is due the poor contact between SIM card and the phone. If possible, you may try to get the official micro sim.
2. very likely, the internet connection is too slow or interrupted.
3. 2G mobile data (gprs) and voice cannot work simultaneously. 2G connection usually is too slow for internet browsing or Google voice search. it is more or less for mms.

Also, reverse tethering (sharing your PC’s connection with Android) is very difficult, and normally requires rooted phone.

Probably there are no settings to display numbers as well in the Moto G call log.

simonKeymasterReferring to your questions:
1. the keyboard only “learns” from you. You can add your words, phases to personal dictionary. Please read this guide: http://motoeguide.com/moto-e-guides/use-moto-e-keyboard/ (it was written for Moto E, but it also applies to Moto G and Moto X)You can also turn on personalized suggestions. There are some other settings in Google keyboard to make your life easier.
2. You can always disable app update. Open Play store app, tap menu key (3 vertical dots in top left), tap settings, uncheck Notifications, Choose “Do not auto-update apps” for Auto-update apps.
3. It will occupy the storage temporally. The system will clear it later automatically.
4. Press and hold the Power button for 7 – 10 seconds, Moto G will restart. Rebooting is not a menu option in Moto G, but you can still do it.
5. The location service is needed for Google and other apps to provide location based services, e.g., maps and navigation.
You’d better turn it on and choose battery saving mode.
6. screen protector is not a requirement. Gorilla glass can provide good protection from scratch. But it is not scratch-proof. Sand, sometime, your keys, may leave some scratch on it.
Most people put screen protector on the phone to keep it “new”.
It is up to you.

If status shows charging, it means the battery can still take current from the charger. This is normal. Just image, when your battery shows 1% battery level, you may still use it about one hours. The battery levels in the two ends (close to 0% and close to 100%) are not accurate.
You should leave the battery full charged at least a few times each month (until it shows charged).
simonKeymasterIn Google drive app, you can download a copy for offline. Start Google Drive app. tap and hold the file until the option box pops out. You can choose Download a copy.
For file manager, Motorola does not ship it because there are so many good apps in the Play store. My recommendation is ES File Explorer (you may check this guide on basic usage of ES File explorer: http://motoeguide.com/moto-e-guides/manage-files-moto-e-es-file-explorer-file-manager/ )
